La Bouillabaisse: The Beach Vibe of Saint-Tropez
La Bouillabaisse is a cherished part of the local heritage. In the 1900s, Madame Gardanne, a sturdy and determined cook, opened an inn along the national highway that she named La Bouillabaisse, inspired by Etienne Bilal’s song “Lou Cabanon.”
There, she welcomed travelers, fishermen, and local regulars with the firm hand of a future grande dame and served them.
Gardanne served lobsters and grilled fish, stuffed vegetables, and the same bouillabaisse every day.
In the summer of 1932, the first beach huts began to appear on the beach, and the restaurant established itself as a haven for well-informed vacationers and longtime residents of Saint-Tropez.
By 1965, it was known as a “trendy beach,” but far from the glitz and festive spirit of Pampelonne, the spot had carved out a different reputation: that of a sure bet.
